How to Cook Steak and Burgers Indoors - No Grill Required

The end of BBQ season doesn’t mean you have to stop grilling your favourite meats! Here are FarmshareTO’s top tips for indoor grilling so you can make flavourful, juicy steak and burgers on the stove and in the oven.

What you’ll need:

  • Cast iron pan*
  • 2 tbsp butter
  • 6-7 oz steak (we recommend our AAA Filet Mignon)

Spice blend:

  • 1 tbsp garlic powder
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • 1 tbsp ground pepper

Red wine reduction:

  • 1/4 cup balsamic vinegar
  • 1/4 cup red wine
  • 1/2 tbsp brown sugar
  • 1/2 tbsp butter

How to prepare:

  1. Begin by melting down 2 tbsp of butter in a hot cast iron pan, and preheat the oven to 415°F
  2. Mix the spices together and use the blend to liberally season the steak
  3. When the butter is fully melted and the pan is hot, place the steak in the pan and sear for 2 minutes on each side

  4. Once seared on both sides, transfer the entire pan into the preheated oven for 6-8 minutes.
  5. Remove the pan from the oven and immediately wrap the steak in tin foil for 7-10 minutes - this is what keeps the steak juicy
  6. While the steak is resting, combine all red wine reduction ingredients in a small saucepan and bring to a low boil until it begins to thicken
  7. Remove the steak from the foil, top with the reduction and enjoy!
**If you don’t have a cast iron pan, you can use a wire cooling rack on top of a cookie sheet in the oven, making sure to flip the steak halfway through the cook time**

What you’ll need:

  • Cast iron pan
  • Ground beef (we recommend our SRF Wagyu ground beef)
  • Salt & pepper to taste
  • Optional: lapsang souchong tea (mimics the smokey flavour of cooking on a charcoal grill when using the stove)

How to prepare:

  1. Season the ground beef with salt, pepper and any other desired seasonings and form into patties
  2. Bring the cast iron pan to medium heat on the stove
  3. Once hot, place the burgers on the pan, cooking for 6 minutes on each side. Don’t press down on the meat while it’s cooking - the sizzling noise it makes is the sound of all the juices leaving the meat and evaporating, and we want to keep all the flavour in the burger
  4. Once cooked, remove from the heat, place on a bun and top with your favourite toppings!
